Citric acid (E330) is found naturally in many fruits. The more citric acid, the more acidic the fruit. Citric acid can be used in juices and jams as an acidity regulator and also has a certain preservative effect.
Together with the sugar, citric acid helps the fruit's pectin (jelly substances) to solidify so that the jam becomes firm. Calculate 1 / 2-1 1/2 teaspoon (2-6 grams) citric acid per kilogram.
