Piccalilly with finely divided cauliflower consists of 5 kinds of raw pickled vegetables; cauliflower, carrot, onion, leek and cucumber, which are pickled and put in Cervera's own mustard. Piccalilly is originally an English interpretation of pickled South Asian vegetables, where it was used to store vegetables for a long period of time. Cervera has a raw pickling method so that the vegetables retain their natural crispness and retain a bite as they are pickled without heating. In Piccalilly Findelt, the vegetables are cut into smaller pieces, but are still crisp and have a bit of a bite, which is why it is obvious to use as the main part in a home-made remoulade, where it is simply mixed with a little creme fraiche or mayonnaise.
