Dr. Oetker Natron is used as a leavening agent in baked goods - in a practical 140g can.
Baking soda contains no acid, unlike baking soda. This type of leavening agent is best suited for cakes with acidic ingredients, e.g. lemon moon or brownie, or for cakes that contain sour milk products such as buttermilk. When baking soda comes in contact with the acid in the dough, carbon dioxide arises and the dough begins to rise.
