Each year, Lykkeberg collaborates with the Hirtshals Fish Festival to hold a competition, where they select the Herring of the Year. The winner of Herring of the Year 2026 was Restaurant Kronborg from Copenhagen with a recipe made from traditionally matured herring fillets flavored with apple and licorice, creating a unique and delicate taste experience.
Ingredients: 36% traditionally matured HERRING (of which 86% HERRING, salt, sugar), sugar, water, 7% apple cubes, vinegar, salt, fennel seeds, licorice root, natural apple flavouring, acidity regulator (E270), black pepper, dill seeds, preservative (E211), star anise, bay leaf.

Shelf life after opening: 7 days. The herring should be kept covered by the brine.
